Assyrtiko from Plagia was collected a little earlier to create the base wine. This is followed by the second fermentation in the bottle (traditional champagne method) and maturation with the beneficial lees for 22 months. A high level culinary foam with fine and playful foam. Lemon, lime, both their flesh and peel are aromatic. This is followed by brioche, lightly baked dough and pastry aroma. In taste, although Brut Nature (ie without added sugars), it manages to tame its “razor” acidity with the rich body of Assyrtikos.
